Eggless Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the sour milk and mix well.

  4. In another bowl, combine the flour, baking soda, cinnamon, and nutmeg.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Fold in the chopped raisins.

Bake

  1. Pour the batter into a greased cake pan and smooth the top.

  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour milk
Its acidity reacts with baking soda to produce gas that lifts the cake.
Baking soda
Reacts with the acid in the sour milk to release carbon dioxide, helping the cake rise.
All-purpose flour
Provides the main structure that sets as the cake bakes.
Butter
Adds richness and tenderness, and creaming it with sugar traps air for a lighter crumb.
Sugar
Sweetens the cake and helps create a soft, tender texture when creamed with butter.

The step that matters

Stirring the dry ingredients into the wet mixture. Once flour meets liquid, gluten begins to form. Stirring only until just combined keeps the crumb tender, while overmixing makes the cake tough and dense.
