White Cake

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the whipped egg whites, powdered sugar, butter, and milk.

  3. In another bowl, mix the sifted flour, cream of tartar, and baking soda.

  4. Gradually add the dry ingredients to the wet mixture, stirring until smooth.

  5. Add the lemon juice and mix well.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake for 1 hour or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped egg whites trap air, giving the cake lift and a light, airy structure.
Flour
Provides the main structure that sets as the cake bakes.
Butter
Adds fat for a tender crumb and rich flavour.
Powdered sugar
Sweetens the cake and contributes to a fine, soft texture.
Cream of tartar
Stabilises the whipped egg whites, helping them hold their volume.
Baking soda
Reacts with acid in the batter to produce gas that helps the cake rise.

The step that matters

Folding in the whipped egg whites and dry ingredients. Whipped egg whites lose air if overmixed. Stirring gently and only until smooth keeps the batter light, so the cake rises well and does not turn dense.
