Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the custard and coffee flavour are built on.
Egg yolks
Thicken the custard when cooked gently and add richness.
Sugar
Sweetens the custard and balances the bitterness of the coffee.
Whipped cream
Adds air and fat, giving the cream a light, smooth texture.
Gelatin
Sets the mixture so it holds its shape when chilled.

The step that matters

Cook the custard gently. Egg yolks thicken as they heat, but too much heat can scramble them into lumps. Cook slowly and stir to keep the custard smooth.
