What each ingredient does

Gelatine
Provides the gel structure that sets the dessert firm when cooled.
Rich cream
Adds fat and richness, giving a softer, creamier texture to the set dessert.
Sugar
Adds sweetness and helps balance the flavour of the peaches.
Canned peaches
Supply the fruit flavour and sweetness that define the dessert.

The step that matters

Stir the whipped cream in one spoonful at a time. Adding cream gradually and folding it in gently keeps the whipped air and a smooth texture, so the mixture does not deflate or separate while the gelatine is still liquid.

Swap the peach

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
