Why it works: Peach and sugar are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 2,308 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the liquid into a firm, sliceable sponge as it cools.
- Egg whites
- Whipped into the mixture to add airy volume and a light, foamy texture.
- Canned peaches
- Provide the fruit flavour and body of the sponge.
- Sugar
- Sweetens the syrup and balances the tartness of the peaches.
The step that matters
Adding the gelatine over boiling water, then cooling it in ice water. Gelatine must dissolve fully without boiling, since excessive heat weakens its setting power. Chilling the mixture then brings it to the thick, pourable stage before it sets, so it can be beaten to a light texture rather than firming in the pan too early.
