Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oranges
Provide the main juice and pulp that give the filling its flavour and body.
Sugar
Adds sweetness and balances the tartness of the citrus juice.
Corn-starch
Thickens the juice into a set filling when it is cooked.

The step that matters

Boil the corn-starch mixture for 15 minutes. Corn-starch only thickens fully once its granules have been heated to boiling and cooked through. Stopping early leaves a thin, starchy filling that will not set properly.

Swap the lemon

How well each one fits the dish's main ingredients (orange, sugar, corn):

  2. Lemonthe original
  3. Limefits about as well
  4. Figfits about as well

Fit is the average pairing score against orange, sugar, corn. Candidates are from the same food group and used in at least 100 recipes.
