Citron Preserves

Ingredients

Directions

Prepare

  1. Cut the citron into pieces 1 inch thick and 2 inches long.

  2. Weigh the citron and place it in a preserving kettle.

  3. Cook the citron until clear or steam it.

Make the syrup and cook

  1. Make a syrup using equal weight of sugar and water, adding 2 sliced lemons for each pound of fruit.

  2. Add the citron to the syrup in batches and boil for about 15 minutes.

  3. Skim off any foam and transfer the citron to a jar.

Finish and store

  1. Once all the citron is cooked, boil the syrup down until thick and pour it over the citron.

  2. Cover the jar tightly with paper or use air-tight jars.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: 2-nonenal (fatty, green).

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron
Is the main fruit, and its firm flesh holds its shape through long cooking.
Sugar
Sweetens the fruit and, at high concentration, helps preserve it and thicken the syrup.
Lemons
Add acidity and brightness, and their natural pectin helps the syrup set.

The step that matters

Boil the syrup down until thick. Concentrating the sugar syrup is what preserves the citron and gives it a glossy, set texture. A syrup that is too thin can leave the preserve runny and more prone to spoiling.
