Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt codfish
Provides the main savoury flavour and salty seasoning of the cakes.
Potatoes
Supply starch and bulk that bind the mixture and give a soft, fluffy interior.
Eggs
Bind the mashed mixture together so the cakes hold their shape while frying.
Butter
Adds richness and moisture to the mashed mixture.

The step that matters

Drop spoonfuls into the hot fat and fry until brown. If the fat is not hot enough, the cakes absorb grease and turn heavy instead of forming a crisp, browned crust. Frying in properly heated fat seals the surface quickly.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, pepper):

  1. Capsicumfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
