Why it works: Parsley and thyme match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,057 recipes. Both carry cuminaldehyde, which smells Spicy, cumin. The science ↓
Potted Eels
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Cut the cleaned eels into 2-inch pieces.
Place the pieces in a brown earthen pot or a tin pot if no earthen cover is available.
Season the eels with salt, pepper, allspice, parsley, and thyme.
Pour enough vinegar and water over the eels to cover them.
Cover the pot and place it in a slow oven at 300°F (150°C).
Cook until the flesh easily separates from the bones.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
