Boiled Lobster

Ingredients

Directions

Cook the lobster

  1. Plunge the lobster into warm water, then bring the water to a boil.

  2. Boil the lobster for 30 minutes, then remove it and let it cool.

Prepare the meat

  1. Once cool, separate the tail from the body and twist off the claws.

  2. Carefully shake out the liver (greenish color) and remove the coral.

  3. Split the tail and shell it lengthwise underneath, then remove the meat.

  4. Split the meat in the center and remove the vein.

  5. Take the body meat from the shell, remove the spongy fingers and stomach, and discard them.

Serve

  1. Arrange the lobster meat in the center of a cold dish and garnish with parsley, hard-boiled eggs, and pickled beets cut into fancy shapes.

  2. Let each person season to their liking.

What each ingredient does

Lobster
Forms the main dish; its firm, mild meat sets when cooked and is the centre of the plate.
Hard-boiled eggs
Garnish that adds a soft, mild, creamy contrast to the firm lobster meat.

The step that matters

Boil the lobster for 30 minutes. Overcooking toughens lobster protein, making the meat rubbery, while undercooking leaves it unsafe. Timing from the moment the water returns to a boil matters for even, tender meat.

Swap the parsley

How well each one fits the dish's main ingredients (lobster, egg):

  1. Capersfits better
  2. Tarragonfits better
  3. Nutmegfits better
  4. Parsleythe original

Fit is the average pairing score against lobster, egg. Candidates are from the same food group and used in at least 100 recipes.
