Cucumbers in Brine

Ingredients

Directions

Prepare the cucumbers

  1. Leave at least 1 inch of stem on the cucumbers.

  2. Wash the cucumbers well in cold water.

Brine and ferment

  1. Make a brine with enough salt in water to float an egg.

  2. Submerge the cucumbers in the brine daily as you gather them from the vines.

  3. Cut a board to fit inside your barrel. Bore holes in the board.

  4. Place the board on the cucumbers with a weight to keep it submerged.

  5. Remove any scum that rises daily.

Soak and serve

  1. Take out the cucumbers when ready to use.

  2. Soak the cucumbers for 2 to 3 days to remove excess salt.

  3. Pour boiling spiced vinegar over the cucumbers before serving.

  4. Add red pepper for a spicy kick, if desired.

What each ingredient does

Cucumbers
Form the pickle itself, becoming crisp and firm as they cure in brine.
Coarse sea salt
Draws water out of the cucumbers and preserves them during brining.
Boiling spiced vinegar
Adds acidity and flavor, giving the pickles their tangy character.

The step that matters

Keeping the cucumbers fully submerged. Cucumbers exposed to air above the brine can spoil and grow mold. A weighted board keeps them under the liquid, and removing scum daily helps the brine stay clean.

Swap the cucumber
