What each ingredient does

Cucumbers
Provide the main body; brine and heat soften their firm flesh into a tender pickle.
Vinegar
Adds sharp acidity that preserves the cucumbers and gives the pickle its tang.
Sugar
Adds sweetness that balances the sharpness of the vinegar.
Spices
Contribute warm aroma and flavour to the pickling liquid.
Raisins or grapes
Add sweetness and a chewy texture to the pickle mixture.

The step that matters

Boil until a fork easily penetrates the cucumbers. Heat softens the cucumbers' cell walls and pectin. Stopping too early leaves them firm, while overcooking breaks them down until they turn mushy.

Swap the mace

How well each one fits the dish's main ingredients (cucumber, vinegar, sugar, cinnamon, clove, allspice, pepper):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Gingerfits better
  4. Macethe original

Fit is the average pairing score against cucumber, vinegar, sugar, cinnamon, clove, allspice, pepper. Candidates are from the same food group and used in at least 100 recipes.
