Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down during cooking to give the soup body and a starchy, creamy base.
Rice
Releases starch as it cooks, helping thicken the soup and soften its texture.
Butter and flour
Flour thickens the broth as the butter carries it in, giving the soup a smoother body.
Sweet cream
Adds richness and a smooth, mellow finish when stirred in at the end.

The step that matters

Adding the sweet cream just before serving. Cream held at a long boil can separate and turn grainy, so it is added off the heat or at the end, once the soup is finished cooking.

Swap the potato

How well each one fits the dish's main ingredients (rice, butter, flour, cream):

  1. Leekfits about as well
  2. Potatothe original
  3. Arrowrootfits about as well
  4. Chivefits about as well

Fit is the average pairing score against rice, butter, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
