Why it works: Asparagus and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 1,968 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Asparagus with Eggs

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Boil the asparagus for 20 minutes.

  2. Cut off the tender tops and place them in a deep pie plate.

  3. Butter, salt, and pepper the asparagus well.

Bake and serve

  1. Beat the eggs just enough to break up the yolks.

  2. Add the melted butter, salt, and pepper to the eggs, then pour over the asparagus.

  3. Bake for 8 minutes in a 400°F (200°C) oven.

  4. Serve immediately.

What each ingredient does

Asparagus
Forms the body of the dish as the main vegetable, softened first by boiling.
Eggs
Set in the oven to bind the custard that covers the asparagus.
Butter
Adds richness and fat, carrying flavor through the eggs and asparagus.

The step that matters

Baking the eggs. Egg proteins set as they heat, so the custard turns from liquid to tender in a short time. Leaving it in too long squeezes out moisture and makes the eggs tough and rubbery.

Swap the asparagus

How well each one fits the dish's main ingredients (egg, butter, pepper):

  1. Capsicumfits about as well
  2. Asparagusthe original
  3. Chivefits about as well
  4. Potatofits about as well

Fit is the average pairing score against egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
