Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the onions but do not peel them.

  2. Boil the onions in salted water for 1 hour, changing the water twice.

  3. Drain the onions carefully and place them closely together in a baking pan.

Bake and serve

  1. Sprinkle salt and pepper on each onion and add 1 teaspoon of butter on top.

  2. Bake in a hot oven at 400°F (200°C) for 30 minutes until tender and browned.

  3. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Cooking softens them and baking browns their surfaces, giving a tender, sweet result.
Butter
Adds fat that carries flavour and helps the onion surfaces brown during baking.

The step that matters

Boil the onions in salted water for 1 hour, changing the water twice. Long boiling softens the dense layers so they become tender before baking. Changing the water removes harsh sulfur compounds that cause bitterness and strong odour, leaving a milder onion.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
