What each ingredient does

Eggs
Bind the mash and help it set into a firm casserole when baked.
Milk
Adds moisture and softness to the mash so it bakes creamy rather than dry.
Potatoes
Add starch that gives the mash body and a smooth, fluffy texture.
White onions
Provide the main flavour and sweetness as they soften when boiled and mashed.

The step that matters

Stir the mixture vigorously. Vigorous stirring after the milk and eggs are added helps distribute the liquid and egg evenly through the mash, so the casserole sets uniformly rather than in patches.
