The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lard
Fat that keeps the paste tender and short.
Flour
Gives the paste structure and thickens the lemon filling.
Lemon juice
Adds sharp acidity that brightens the filling.
Sugar
Adds sweetness to balance the lemon's sourness.

The step that matters

Securing the roll tightly. Tight rolling and well-secured ends keep the filling inside the paste while the roll boils. Loose ends let the lemon mixture escape and weaken the roll's shape.
