Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Canned peaches
Provide the main fruit flavour and body of the pudding.
Sugar
Sweetens the peach syrup and balances the fruit's tartness.
Gelatin
Sets the peach mixture so it holds its shape once chilled.
Egg whites
Whipped into foam, they lighten the pudding and give it a airy texture.

The step that matters

Beat until the mixture begins to harden, then set on ice. Gelatin sets as it cools, so if the mixture firms too far before the chilling step, it can become lumpy or stiff. Stop beating once it begins to thicken and is still spoonable.

Swap the peach

How well each one fits the dish's main ingredients (syrup, sugar, gelatin, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Peachthe original

Fit is the average pairing score against syrup, sugar, gelatin, egg. Candidates are from the same food group and used in at least 100 recipes.
