What each ingredient does

Grapes
Supply the juice and flavor that the jelly is made from.
Sugar
Helps the juice set into a gel and adds sweetness that preserves the jelly.

The step that matters

Boil until it jells. Boiling concentrates the juice and sugar until the pectin and acid in the fruit can form a gel. Stopping too early leaves the jelly runny, while boiling too long makes it stiff and can turn it grainy or sugary.
