Green Peppers, Stuffed with Tomato Sauce

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the peppers

  1. Preheat the oven to 350°F (175°C).

  2. Cut the tops off the green peppers and remove the seeds.

Make the filling

  1. In a skillet, heat olive oil and sauté the chopped onion until translucent.

  2. Add ground meat to the skillet and cook until browned.

  3. Stir in cooked rice, tomato sauce, salt, and pepper.

Stuff and bake

  1. Stuff the mixture into the prepared green peppers.

  2. Place the stuffed peppers in a baking dish and pour remaining tomato sauce over them.

  3. Cover with foil and bake for 30 minutes.

  4. Remove foil and bake for an additional 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green peppers
Hold the filling and soften as they bake, becoming tender shells.
Ground meat
Provides savory richness and browned flavor in the filling.
Cooked rice
Adds bulk and absorbs juices, keeping the filling moist and tender.
Onion
Adds sweetness and aroma as it softens in the olive oil.
Tomato sauce
Supplies moisture and acidity that cooks into the filling and sauce.

The step that matters

Cover with foil and bake for 30 minutes. Covering traps steam so the peppers cook through and soften; uncovering for the final 10 minutes lets the surface and sauce concentrate slightly.

  2. Eggplantbetter flavor fit
  3. Potatobetter flavor fit

Fit is the average pairing score against pepper, rice, meat, tomato, sauce, olive. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
