What each ingredient does

Eggs
Hard-boiled whites hold their shape and take on the flavor of the pickling liquid.
Vinegar
Provides the sharp acidity that flavors the eggs and helps preserve them.
Whole pepper
Adds a warm, sharp aroma to the pickling liquid.
Allspice
Adds a warm, spiced aroma to the pickling liquid.
Whole cloves
Adds a strong, sweet-spiced aroma to the pickling liquid.

The step that matters

Allow to pickle for 3 to 4 weeks before using. The vinegar and spices need time to slowly penetrate the cooked egg. Eating them early gives a sharp, unbalanced taste, while the full flavor develops during the long rest.

Swap the clove

How well each one fits the dish's main ingredients (egg, vinegar, pepper, allspice):

  1. Tarragonfits about as well
  2. Clovethe original
  3. Parsleyfits about as well
  4. Dillfits about as well

Fit is the average pairing score against egg, vinegar, pepper, allspice. Candidates are from the same food group and used in at least 100 recipes.
