What each ingredient does

Oysters
Provide the main flavour and the tender, meaty body of the dariole.
Mayonnaise sauce
Adds fat and moisture, giving the filling a creamy, smooth texture.
Aspic jelly
Gelatine-based jelly that sets the mixture so the darioles hold their shape when turned out.
Lettuce leaves
Add crisp texture and bulk that lightens the filling.

The step that matters

Setting the darioles on ice. The aspic must chill fully to set firmly; if the mixture is too warm or not cold long enough, the darioles will be soft and may collapse when turned out.
