Why it works: Beetroot and pepper are a kitchen classic. They rank in the top 13% of all ingredient pairs, and cooks put them together in 1,682 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Stewed Beetroots in Sauce

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the beetroot

  1. Bake the beetroots in the oven at 400°F (200°C) until tender.

  2. Once cool, remove the skin and slice the beetroots.

Stew

  1. In a saucepan, combine the sliced beetroots with a little vinegar and stock or gravy.

  2. Season with pepper and coarse sea salt, then simmer gently for 30 minutes.

  3. Pour off the gravy.

Make the glaze and serve

  1. Reduce the gravy to a glaze.

  2. Add a few slices of pounded beetroot and the brown sauce to the glaze.

  3. Boil for a few minutes.

  4. Mix gently with the sliced beetroot.

  5. Dish up and garnish with fried bread croutons before serving.

What each ingredient does

Beetroots
Form the main body of the dish and provide its earthy flavour and colour.
Vinegar
Adds acidity that brightens the sweet earthiness of the beetroot.
Stock or gravy
Supplies liquid and savoury depth in which the beetroot simmers and reduces to a glaze.
Brown sauce
Adds savoury, tangy richness and deepens the colour and flavour of the glaze.

The step that matters

Reducing the gravy to a glaze. If the gravy is reduced too little it stays thin and waters down the beetroot, while over-reducing can make it sticky and overly salty. Gentle, watchful reduction concentrates flavour and gives a glossy coating.
