  1. Season with salt, pepper, and cayenne, then add the sherry or Madeira.

  2. Let the mixture simmer gently for 30 minutes, moisten with demi‑glace.

Prepare the crusts and serve

  1. Cut the French roll in half lengthwise and scoop out the soft part.

  2. Fry the roll halves in clarified butter until lightly colored, then drain them.

  3. Mask the inside of the roll with liquid meat glaze, fill with the truffles and sauce, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Truffles
Provide the main flavor and aroma, which is the focus of the dish.
Butter
Adds richness and carries the truffle aroma while the slices cook gently.
Sherry or madeira
Adds acidity and depth to the sauce as it reduces with the truffles.
Demi-glace
Adds savory body and moisture to the truffle mixture.
French roll
Forms the crisp, browned case that holds the filling.

The step that matters

Frying the roll halves. Frying in clarified butter until lightly colored browns the crust and seals it, so it stays crisp under the moist filling instead of going soggy.
