Rice Pudding

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash the rice and place it in a quart of milk.

  2. Season with coarse sea salt to taste.

  3. Add the raisins and set the mixture in the oven at 300°F (150°C) for three hours.

Bake and stir

  1. When the top begins to brown, stir the mixture from the bottom.

  2. Repeat stirring until the pudding is done, adding more milk if it becomes too dry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Starch that swells and softens in the milk, giving the pudding its body.
Milk
Liquid that cooks the rice slowly and provides the creamy texture.
Raisins
Add sweetness and chewy bits that soften as the pudding bakes.

The step that matters

Stirring from the bottom as the top browns. Once a skin forms on top, the liquid near the bottom can scorch or stay thin. Stirring from the bottom redistributes the heavier rice and milk so the pudding cooks evenly and stays creamy.

Swap the raisin

How well each one fits the dish's main ingredients (rice, milk):

  1. Coconutfits better
  2. Vanillafits better
  3. Peachfits better
  4. Raisinthe original

Fit is the average pairing score against rice, milk. Candidates are from the same food group and used in at least 100 recipes.
