Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide starch and body, softening as they cook into the soup.
Milk
Forms the liquid base and adds creaminess to the soup.
Flour
Thickens the soup as its starch swells in the hot liquid.
Butter
Carries flavor and fat, and helps the flour brown richly.

The step that matters

Stirring the browned flour into the hot soup. Flour starch thickens only when heated in liquid, and clumps form if it is not dispersed. Stirring well spreads the flour evenly so the soup thickens smoothly.

Swap the potato

How well each one fits the dish's main ingredients (milk, flour, butter, pepper):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Chivefits less well
  4. Shallotfits less well

Fit is the average pairing score against milk, flour, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
