Transparent Tapioca Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding

  1. Soak the tapioca in cold water for about 1 hour.

  2. Cook the soaked tapioca slowly in 3 cups of water until transparent.

  3. Slice the lemon thinly.

  4. Boil the sliced lemon in a little water until tender.

  5. Add sugar and salt to the lemon.

  6. Mix the seasoned lemon with the cooked tapioca.

Make the topping

  1. Beat the egg whites with 2 tablespoons of sugar.

  2. Add the lemon juice to the beaten egg whites.

Top, brown and serve

  1. Spread the frosting on top of the pudding.

  2. Brown it in a 350°F (175°C) oven.

  3. Serve the pudding cold.

What each ingredient does

Tapioca
Starch that swells in water and thickens the pudding, turning clear when fully cooked.
Egg whites
Whipped with sugar to form a foam that gives the topping its airy structure and sets when baked.
Lemon
Adds acidity and bright flavour that balances the sweetness of the pudding.
Sugar
Sweetens the lemon and the egg white topping, and helps the beaten whites hold their foam.

The step that matters

Cooking the tapioca slowly until transparent. Tapioca starch swells and turns clear only when fully gelatinised. Undercooked grains stay opaque and chalky, while strong heat can scorch the base of the pudding before the grains clear.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):
