Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten whites add air, giving the sherbet a lighter, fluffier texture.
Sugar
Sweetens the fruit juice and lowers the freezing point, keeping the sherbet soft rather than rock-hard.
Lemons
Provide acidity that brightens the flavour and balances the sweetness.
Bananas
Add body and moisture, making the frozen mixture creamier.

The step that matters

Fold in the egg whites just before freezing. Beaten egg whites hold air only briefly. If they sit too long before freezing, they deflate and the sherbet loses its light, airy texture.

Swap the banana

How well each one fits the dish's main ingredients (lemon, pineapple, orange, sugar, egg):

  1. Vanillafits better
  2. Limefits better
  3. Figfits better
  4. Bananathe original

Fit is the average pairing score against lemon, pineapple, orange, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
