Tongue in Jelly
Ingredients
Directions
Prepare
Slice the cooked tongue and arrange it in a mold or dish that holds it in place.
Pour aspic jelly around the tongue to a thickness of ½ inch.
Once the jelly is nearly firm, cover the tongue completely with more jelly.
Chill and serve
Refrigerate until cold and firm before serving.

What each ingredient does
- Cooked tongue
- Forms the meat centre of the dish, held in place by the surrounding jelly.
- Aspic jelly
- Sets into a clear, firm gel that encases and holds the tongue together.
The step that matters
Layering the jelly in stages. Pouring the second layer while the first is nearly firm lets the layers bond without mixing or sliding. Pouring too early can smear the first layer, and waiting until it is fully set can leave a visible seam where the layers fail to fuse.
