Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which becomes tender through slow cooking in the poaching liquid.
Salt pork
Renders fat for frying the onion and chicken, adding savory flavor to the dish.
Flour
Thickens the pan fat and broth into a smooth, cohesive sauce.
Chicken broth
Forms the liquid base of the sauce, carrying flavor from the poached chicken.
Onion
Softens in the hot fat and adds sweetness and aroma to the sauce.

The step that matters

Gradually stir in the broth until smooth. Adding liquid slowly while stirring lets the flour disperse evenly and hydrate, which prevents lumps and gives a smooth sauce.
