Chicken Chartreuse

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Mix the finely chopped cooked chicken with cream or poulette sauce.

  2. Line a well-buttered mold with hot cooked rice, about 1 inch thick.

  3. Fill the center with the meat mixture and cover the top with rice.

  4. Cover the mold and cook in a water bath at 400°F (200°C) for 45 minutes.

  5. Serve surrounded by tomato sauce.
