Rum Omelet

Ingredients

Directions

  1. Prepare an omelet as you would normally, keeping it slightly underdone.

  2. Just before serving, pour 2 tablespoons of brandy around the omelet.

  3. Dip a block of sugar in the brandy and place it on top of the omelet.

  4. Light the sugar with a match or a lighter at the table.

  5. Serve with cream-tomato or mushroom sauce around the omelet, if desired.

  6. For added flavor, mix chopped chives or parsley into the omelet before cooking.
