Why it works: Rhubarb and cinnamon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 279 recipes. Both carry methyl cinnamate, which smells strawberry. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. If using tough rhubarb, peel it and cut into ½ inch pieces.

  2. Line a pie plate with the crust.

Fill and bake

  1. Fill the crust with rhubarb and sprinkle with sugar and butter.

  2. If desired, add cinnamon or nutmeg for flavor.

  3. Cover with another crust and seal the edges.

  4. Bake at 400°F (200°C) for about 30 minutes.

What each ingredient does

Rhubarb
Provides the tart flavour and the bulk of the filling, releasing juice as it cooks.
Sugar
Sweetens the tart rhubarb and helps draw out its juices during baking.
Butter
Adds richness and a little fat to the filling as it melts over the fruit.
