Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and layer

  1. Butter a pudding dish.

  2. Layer soft bread crumbs and sliced sour apples alternately.

  3. Season each layer with bits of butter, coarse sea salt, and ground cinnamon.

  4. Pour ½ cup of molasses and ½ cup of hot water over the dish.

Bake and serve

  1. Bake at 350°F (175°C) for 30 to 45 minutes, until the apples are soft.

  2. Serve with cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soft bread crumbs
Form the bulk of the layers and soak up the molasses syrup as they bake.
Sliced sour apples
Supply tartness and moisture that softens as the dish bakes.
Butter
Adds richness and fat, helping the top and crumbs brown slightly.
Ground cinnamon
Adds warm aroma that pairs with the apples and molasses.
Molasses
Adds deep sweetness and color, and moistens the crumbs as it bakes.

Flavor stand-ins for the raisin

The recipe marks raisin as optional. How well each one fits the dish's main ingredients (bread, apple, butter, cinnamon, molasses, almond, walnut):

  1. Figbetter flavor fit
  2. Vanillaabout as good a flavor fit
  3. Pearabout as good a flavor fit
  4. Raisinthe original

Fit is the average pairing score against bread, apple, butter, cinnamon, molasses, almond, walnut. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
