Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemon or orange jelly
Sets as it cools, giving the pudding body and a fruity flavour.
Egg whites
Whipped into a foam that traps air, giving the pudding its light, stiff texture.

The step that matters

Beating the whites into the jelly. The jelly must be thickened but still soft enough to mix. If it is too liquid, the whipped foam deflates; if it is too set, it forms lumps and the whites will not blend evenly.
