Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour apples
Provide the bulk of the chutney and tartness that balances the sugar.
Sugar
Adds sweetness and helps thicken the chutney as it cooks down.
Cider vinegar
Adds acidity that gives the chutney its tang and helps preserve it.
Currant jelly
Adds pectin and fruity sweetness that help the chutney set.
Lemon juice
Adds acidity and brightness that lift the flavour of the fruit.

The step that matters

Stirring during the second hour. Sugar and fruit solids can scorch on the bottom of the pot as the mixture thickens, so frequent stirring prevents burnt flavour and keeps the texture even.

Swap the onion

How well each one fits the dish's main ingredients (apple, raisin, pepper, cider, vinegar, currant, sugar):

  1. Capsicumfits better
  2. Mustardfits better
