What each ingredient does

Small cucumbers
Form the bulk of the pickle and absorb the sauce as they rest.
Cauliflower
Adds firm texture that holds up through the long soak in vinegar.
Flour
Thickens the hot vinegar mixture into a smooth, coating sauce.
Ground mustard
Provides the sharp mustard flavour that defines the pickle.
Brown sugar
Balances the sharpness of the vinegar with sweetness.
Vinegar
Acidifies the sauce, providing tang and preserving the vegetables.

The step that matters

Stirring the vinegar into the flour and mustard. Pouring the hot liquid in slowly while stirring keeps the flour from clumping. Lumps form when flour meets hot liquid all at once, leaving the sauce grainy instead of smooth.

Swap the onion
