Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the eggs until light.

  2. Add the milk and chopped dates, mixing well.

  3. In a separate bowl, combine the whole wheat flour, all-purpose flour, baking powder, and salt.

  4. Gradually add the dry ingredients to the wet mixture, stirring until smooth.

  5. Stir in the melted butter.

Bake

  1. Pour the batter into hot gem pans.

  2. Bake at 400°F (200°C) for about 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set in the oven.
Whole wheat flour
Provides the main structure and a nutty, slightly coarse texture.
All-purpose flour
Lightens the texture and helps the gems rise tender.
Baking powder
Releases gas in the heat, causing the gems to rise.
Dates
Add moisture and natural sweetness throughout the batter.
Butter
Adds fat for richness and a tender crumb.

The step that matters

Pour the batter into hot gem pans.. Hot pans start the batter cooking on contact, helping the gems rise quickly and develop a crisp edge instead of spreading or baking dense.
