Mushroom Soup
Ingredients
Directions
Make the base
Scald the milk in a double boiler.
Melt the butter, then stir in the flour, salt, and pepper.
Stir this mixture into the hot milk and cook for 10 minutes.
Add the beaten yolks and cream, stirring and cooking for 5 more minutes.
Add the mushrooms and serve
Peel the mushrooms, remove the stems, and break them into small pieces.
Place the mushrooms in a saucepan with just enough hot water to prevent sticking and cook for 5 minutes.
Chop the mushrooms finely and add them to the cream soup.
Serve immediately.
You may omit the eggs or add them slightly beaten a few minutes before serving.

What each ingredient does
- Milk
- Forms the liquid base of the soup and carries the other flavors.
- Cream
- Adds richness and a smoother, silkier body to the soup.
- Fresh mushrooms
- Provide the main earthy flavor and substance of the soup.
- Butter
- Adds fat and flavor, and helps build the roux with the flour.
- Flour
- Thickens the soup by forming a roux with the butter.
- Egg yolks
- Enrich the soup and add body as they thicken gently with heat.
The step that matters
Adding the beaten yolks to the hot soup. Egg yolks can scramble if added to very hot liquid without care. Keeping the heat gentle while stirring lets the yolks thicken the soup smoothly instead of curdling it.
