Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Place the prepared shad on a thick hardwood board and secure it with a few tacks.

  2. Season the shad with coarse sea salt and black pepper.

  3. Cover the shad with buttered crumbs.

Shape and bake

  1. Using a pastry bag and tube, shape hot mashed potatoes into roses around the fish.

  2. Brush the potato roses with the beaten egg yolk.

  3. Cook in a hot oven at 400°F (200°C) for 25 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shad
Forms the main body of the dish, cooking through to flake tender under the crumbs.
Hot mashed potatoes
Forms the piped roses that hold their shape and brown attractively in the oven.
Egg yolk
Brushed over the potatoes to promote browning and a glossy golden finish.
Buttered crumbs
Form a crisp, golden crust over the fish while keeping its interior moist.

The step that matters

Brush the potato roses with the beaten egg yolk. Egg yolk contains proteins and fats that brown and set on heating, so an even coat gives a glossy, golden surface. Uneven or thick application can leave patches pale or greasy.

Swap the potato

How well each one fits the dish's main ingredients (pepper, egg):

  1. Capsicumfits better
  2. Spinachfits better
