Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the ham

  1. Prepare the ham as for boiling and simmer it slowly for 4 hours.

  2. Remove the ham and cut off the skin.

  3. Press cloves into the fat of the ham.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C) for 2 hours, basting initially with sherry and then with the fat in the pan.

  2. Fifteen minutes before it's done, cover with cracker crumbs and brown sugar.

  3. If serving hot, make gravy by stirring flour into the fat from the pan, then add brown stock.

What each ingredient does

Ham
Is the main cut of meat, cooked by simmering and then baking until tender.
Sherry
Adds flavour to the ham through basting while it bakes.
Cracker crumbs
Form a crisp, browned crust on the ham's surface near the end of baking.
Brown sugar
Adds sweetness and helps the crust brown when baked on top of the ham.
Flour
Thickens the pan fat and drippings to make the gravy.

The step that matters

Fifteen minutes before it's done, cover with cracker crumbs and brown sugar.. Adding the crumb and sugar topping too early lets it burn before the ham is finished, while adding it too late leaves no time for it to brown and set into a crust.

Swap the clove

How well each one fits the dish's main ingredients (ham, sherry, sugar, flour):

  1. Cinnamonfits better
  2. Nutmegfits about as well
  3. Jalapenofits about as well
  4. Clovethe original

Fit is the average pairing score against ham, sherry, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
