Apple Sherbet

Ingredients

Directions

Make the apple base

  1. Select nice, bright-flavored apples and cook them with a piece of cinnamon bark, a pinch of salt, and enough water to cover.

  2. When the apples are very soft, mash them through a puree sieve.

  3. Add a grating of nutmeg and the juice of a lemon, then sweeten to taste.

Freeze

  1. Freeze the mixture, adding the beaten egg white as you would in other sherbets.

  2. Optionally, add small pieces of ginger with the egg white.

What each ingredient does

Apples
Provide the main flavor and the pulp that becomes the sherbet base.
Egg white
Adds air and a light, smooth texture when beaten into the frozen mixture.
Lemon juice
Adds acidity that brightens the apple flavor and balances the sweetness.
Sugar
Sweetens the base and softens the texture of the frozen sherbet.

The step that matters

Adding the beaten egg white while freezing. Egg white whipped into a partly frozen mixture traps air and keeps ice crystals small, giving a light texture. If it is added too early or not beaten enough, the sherbet can turn dense or icy.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (apple, cinnamon, nutmeg, lemon, sugar, egg):

  1. Cardamomfits better
  2. Clovefits better
  3. Allspicefits about as well
  4. Gingerthe original

Fit is the average pairing score against apple, cinnamon, nutmeg, lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
