Eggs in Green Peppers

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the peppers

  1. Parboil the peppers in boiling water for 5 minutes.

  2. When cool, cut about 1 inch from the pointed end, remove the seeds, and cut off the stem.

  3. Sprinkle the inside with salt and pepper.

Bake and serve

  1. Break an egg into each pepper and place a small piece of butter on top.

  2. Place the peppers in an agate plate and bake at 350°F (175°C) for 20 minutes, or until the egg is firm.

  3. Serve on a slice of toast, surrounded by white or tomato sauce.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a firm filling that holds its shape when the peppers are cut and served.
Green peppers
Act as edible cups that hold the egg and soften slightly during baking.
Butter
Adds richness and moisture to the egg as it bakes.

The step that matters

Baking until the egg is firm. Egg proteins set gradually with heat. Pulling the peppers too early leaves the white runny, while overbaking makes the yolk dry and rubbery. Check the egg rather than relying only on the clock.
