Why it works: Rhubarb and cinnamon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 279 recipes. Both carry methyl cinnamate, which smells strawberry. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. If using tough rhubarb, peel it and cut into ½ inch pieces.

  2. Line a pie plate with the crust.

Fill and assemble

  1. Fill the crust with rhubarb.

  2. Sprinkle with sugar and add butter.

  3. If desired, flavor with cinnamon or nutmeg.

  4. Cover with another crust and seal the edges.

Bake

  1. Bake at 400°F (200°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavor and the bulk of the filling.
Sugar
Sweetens the filling and balances the tartness of the rhubarb.
Butter
Adds richness and fat to the filling.
Pie crust
Forms the container that holds the filling and browns in the oven.

The step that matters

Sealing the edges of the top crust. A poor seal lets the juices bubble out during baking, which can leave the filling dry and the crust underbaked at the edges.
