Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Stuff the turkey and tie the legs over the tailbone to prevent breaking.

  2. Place 2 mason jar tops in the corners of a roaster and rest a perforated rack on top.

  3. Add 1 quart of water to the pan and place the turkey on the rack.

  4. Brush the turkey breast with melted butter and cover it securely.

Roast

  1. Roast in a preheated oven at 350°F (175°C) for 3 hours, basting every 20 minutes if not using a self-basting pan.

What each ingredient does

Turkey
Its protein sets firm as it cooks, forming the body and structure of the dish.
Melted butter
Adds fat that enriches the breast and helps its skin brown and taste rich.

The step that matters

Basting during the roast. Each time the oven door opens, heat escapes and the roasting time lengthens. Basting keeps the surface moist, but the bird must still cook through before it is served.
