Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Creamed Celery Toast
Ingredients
Directions
Scrape the outside stalks of celery and soak them in cold water for at least 1 hour.
Cut the celery into small pieces and cook in salted water until tender.
Drain the water and add enough milk to cover the celery.
Bring the mixture to a boil, then add butter, coarse sea salt, and black pepper to taste.
Thicken the mixture with flour or corn starch.
Pour the creamed celery over narrow strips of toast.
