Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Avatermelon Rind Preserve

Ingredients

Directions

Prepare

  1. Remove the heart of the watermelon, leaving ¼ inch of rind.

  2. Peel the green skin and cut the rind into 1‑inch square dice.

  3. Weigh the rind and use an equal weight of white sugar.

Make the syrup

  1. In two kettles, divide the rind and sugar, making a syrup with minimal water.

  2. Boil and skim the syrup, then cook the rind until very clear.

Finish and seal

  1. Scald the lemons, rub them well, and slice them, removing the seeds.

  2. Boil the lemon slices with the rind for 15 minutes.

  3. Seal the preserve hot in glass jars.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Watermelon rind
Forms the body of the preserve and turns translucent as it cooks in the syrup.
White sugar
Draws water out of the rind, adds sweetness, and helps preserve the finished product.
Lemons
Adds acidity that brightens the sweetness and balances the flavor.

The step that matters

Cook the rind until very clear. The rind must cook long enough for sugar to replace the water inside it. This makes it translucent and builds the high sugar concentration that helps the preserve keep.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerthe original
  3. Marjoramfits about as well
  4. Corianderfits about as well

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
