Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the main flavour and body of the fish balls.
Raw potatoes
Starch bulks out the mixture and helps it hold together when shaped.
Dripping
Adds fat that makes the mixture rich and smooth.
Eggs
Bind the mixture so the balls keep their shape.
Flour
Stiffens the mixture so it can be formed into balls.

The step that matters

Browning in deep fat. The balls must be fully heated through as well as browned on the outside. Browning happens at the surface, so frying too hot can colour them before the centre is hot, while frying too cool leaves them greasy.

Swap the potato

How well each one fits the dish's main ingredients (egg, flour):

  1. Arrowrootfits better
  2. Chivefits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against egg, flour. Candidates are from the same food group and used in at least 100 recipes.
