The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Its starch thickens the milk as the grains break down during simmering, giving a thick texture.
Milk
Provides the liquid base and creamy body of the dish as it cooks down.
Cornstarch
Thickens the liquid further when the rice alone is not thick enough.
Egg yolks
Add richness and further thicken the dish when stirred in near serving.

The step that matters

Boiling the rice rapidly until starch granules burst. Starch granules must swell and burst to release starch that thickens the liquid. Boiling too gently leaves the rice grains intact and the gruel thin.

Swap the vanilla

How well each one fits the dish's main ingredients (milk, rice, egg):

  1. Coconutfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against milk, rice, egg. Candidates are from the same food group and used in at least 100 recipes.
