Cottage Cheese

Ingredients

Directions

  1. Pour milk into a pan and place it in a cool room with fresh air. Do not cover the pan.

  2. If the room is dusty, place long sticks over the pan and cover with cheesecloth.

  3. When the milk thickens, set the pan in a larger pan of warm water and keep it in a warm place or in the oven until the curd separates without becoming hard.

  4. Place cheesecloth in a colander and pour the milk into it. Let it stand for several hours to drain the whey.

  5. Chop green peppers or onions and mix them with the cheese. Add salt and pepper to taste.

  6. Serve with apple or potato salad, or spread on sandwiches. Optionally, add sugar and caraway seeds instead of onion and pepper.
